You’ll need:

  • 2 thick slices of bread (brioche, sourdough or your favourite vegan loaf)
  • 1 medium egg (or flaxseed substitute: 1 tbsp ground flax + 3 tbsp water)
  • 120ml milk (dairy or plant-based)
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract (optional but lovely)
  • 1 tsp maple syrup or honey (plus extra to drizzle)
  • A knob of butter or 1 tsp coconut oil for frying

How to make it:

  1. Whisk together the egg (or flax mix), milk, cinnamon, vanilla and syrup or honey.
  2. Dip each slice of bread in the mixture for a few seconds per side.
  3. Melt butter or oil in a frying pan over medium heat and fry the bread for 2-3 minutes per side until golden.
  4. Serve warm with a drizzle of maple syrup, banana or stewed apples.

Tip: Sprinkle a few crushed pecans on top for an extra crunch.

Sourdough Grilled Cheese & Tomato Soup

A classic combination made for chilly afternoons.

Nothing says autumn comfort like melted cheese and tomato soup. This version is simple, soothing and best enjoyed with a thick blanket and your favourite film.

You’ll need:

  • 2 slices of sourdough bread
  • 2 slices of mature cheddar (or vegan cheese alternative)
  • 1 tbsp butter or olive oil
  • 1 tin chopped tomatoes
  • 1 small onion, diced
  • 1 garlic clove, crushed
  • ½ tsp smoked paprika
  • Salt, pepper and a pinch of sugar to taste

How to make it:

  1. Sauté onion and garlic in a saucepan until soft.
  2. Add tomatoes, paprika and seasoning. Simmer for 10-15 minutes.
  3. Blend until smooth, adding a splash of water if it’s too thick.
  4. For the sandwich, butter your bread, layer in the cheese, and toast in a hot pan until golden and melty.
  5. Serve together – dunk, swirl and enjoy.

Creamy Garlic Chicken with Parmesan Mash

A simple, hearty dinner that feels like a Sunday treat.

Rich, garlicky and perfectly comforting, this one-pan wonder brings the warmth of autumn to your plate in under 30 minutes.

You’ll need:

  • 2 chicken breasts
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme or rosemary
  • 150ml double cream (or plant-based cream alternative)
  • 1 tbsp butter or olive oil
  • Salt and black pepper

For the mash:

  • 2 large potatoes, peeled and chopped
  • 1 tbsp butter or olive oil
  • 2 tbsp grated parmesan (or nutritional yeast)
  • Splash of milk

How to make it:

  1. Boil potatoes until soft, then mash with butter, parmesan and milk. Season to taste.
  2. Pan-fry the chicken in butter or oil until golden.
  3. Add garlic and thyme, cooking for another minute.
  4. Pour in the cream, simmer gently for 5-7 minutes until thickened.
  5. Serve the chicken over a generous spoon of mash, with the creamy sauce drizzled on top.

Optional extra: Add a side of green beans or roasted carrots for colour and crunch.

Chocolate Chip Pumpkin Loaf

Sweet, spiced and everything nice.

This loaf is part cake, part comfort blanket. Perfectly moist, lightly spiced and filled with chocolate chips, everything we love about autumn baking.

You’ll need:

  • 200g plain flour
  • 150g pumpkin puree (or mashed roasted pumpkin)
  • 100g light brown sugar
  • 2 medium eggs (or chia seed substitute: 2 tbsp chia + 6 tbsp water)
  • 100ml vegetable oil
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp baking powder
  • 75g chocolate chips

How to make it:

  1. Preheat oven to 180°C (160° fan)
  2. Mix pumpkin puree, sugar, eggs and oil in a large bowl.
  3. Add flour, baking powder, cinnamon and nutmeg. Stir until smooth.
  4. Fold in the chocolate chips, then pour into a lined loaf tin.
  5. Bake for 40-45 minutes until golden and a skewer comes out clean.
  6. Serve warm with a scoop of vanilla ice cream (or vegan alternative) for the ultimate cosy dessert.

Tip: Store in an airtight container – it’s even better the next day.
